Awesome stuff – looks like a great group of people, and a wonderful turkey!

Hats off to ya for hosting this for restaurant orphans! Cooking for a bunch of really good chef’s I am sure is nothing but intimidating!

I did a really similar stuffing this year – apple/chestnut/pork belly – from Elizabeth David (bless her).. really great flavors with a turkey.

Eating like a Tudor king and drinking champagne at 1 in the morning with depraved coworkers…sounds very similar to the catering lifestyle to me!

Well done! What a great feast. It can be intimidating cooking for your brethren, although we should know better than to be nervous. Even though they know and appreciate food better than the normal soul, the restaurant people are also the most understanding and gracious guests there are. I actually miss the craziness of feeding the masses at the restaurant. Well, not the masses, but the staff that was a second family and just the challenge of running a perfect holiday. Everything organized and prepared, and in the end – no mistakes. Hopefully. The term orphans fits perfect, although we will always have one another as family. Congrats on great feast and a great, well written post. Happy post Thanksgiving. Todd.

Success! It looks like you pulled it off without a hitch and I wouldn’t have expected anything less. And the wine pairings look like they worked out incredibly. Was the Heredia awesome? We had the Wehlener Sonnehur 96, too, but with the turkey and it was perfect. Congrats, B!
